Is there a way to run more than one work unit per project?

Not exactly sure what you are asking. If you have a dual-core or dual-CPU system (or Hyperthreaded), then yes, it is possible to run two results from the same project at the same time; there is a preferences option for "on multiprocessors, allow use of x CPUs". If you have a single CPU system, then there is no way to run two of _anything_ at the same time.

If you're asking about having more than one result in your "Work" tab, with one having status "Running", and others having status "Ready to run", then yes, you just need to make your cache enough larger to hold one or more additional work units. This is also a preference item on the web page, "Connect to network about every x days", default is 0.1, maximum is 10 days. I would suggest raising this value _slowly_, and before going above _1_ day, familiarize yourself with the rules recommended in the Wiki. ("1/n * shortest deadline where n is number of projects" is the main one.)
