I seem to be unable to find the setting that keeps BOINC up in the notification bar.

This is on a Sprint LG Stylo 5, and I know that I haven't set the phone's "App Notifications" to Off for Boinc.

First, I would check your available ram, and Boinc RAM settings, just to make sure the app doesn't crash.
Second I would install CPU-Z, to see if your phone is still crunching data, even when the icon is not there.

If it does crash, I would recommend you to uninstall as much as you can, and free up internal memory (SSD/EMMC) space, by offloading all photos or videos to your PC or external SD Card.

Also, run boinc from internal eMMC/SSD only, don't run it from an SD card.
