I have a computer that goes for several weeks at a time without an active internet connection. What I'd like to do is queue up tasks to crunch and then when I get back to the system and bring it back online for the results to get uploaded.

The problem I run into is that the deadlines for tasks get broken up into days so that every day (or couple) you have to connect and upload the results or you end up going past deadlines. Even if I tell boinc to give me tasks for the maximum amount of time 10 days plus 4?

Think of it this way, if I'm going on vacation for 2 weeks and my computer will be running but without network access I'd like to to keep it running while I'm gone but still be able to report results for the 2 weeks once network connectivity is restored when I get back.

Is there any way to do this?

Task deadlines are set by each project individually. The only way to do this is to select a project with lengthy deadlines.

The classic example is CPDN (Climate Prediction), with deadlines extending close to 1 year. SETI has some tasks with three week deadlines, but most tasks are allowed seven weeks or longer. Unfortunately, you can't select only to receive the longer tasks. RNA World has very long-running tasks, but I'm not familiar with the details of their deadlines.

There have been suggestions by moderators and others that deadlines are reduced for CPDN but no change in sight on that one. It is a hangover from the days when tasks could take over six months even for a fast computer of the era.
