It seems that BOINC does not recognize the BlueJeans video conferencing app as something that constitutes an active computer. This combined with something about the two application running at the same times causes a macBook pro to become completely unresponsive. It seems to me that this is a bug or missing feature in BOINC but am not sure... anyone here have a thought?

BOINC detects "usage" as mouse of keyboard inputs, thus won't detect using, say, the microphone or camera in a video conference doesn't count as "in use".
One possible solution is to make BlueJean an excluded application within BOINC, so suspending activity while taking part in a video conference.
