Is it possible to set the client crunch one full work unit before moving onto the next one?

I have it set to the default switch between each tasks every 60 minutes.

Thanks in advance.

I don't think there is. You can get something like it by setting the switch between tasks time to be longer than runtime for any task.

Keep in mind that that setting is more like a wish and less like a command. BOINC may switch to another task earlier if it thinks it has good reason to do so.

If you have long running tasks, where long is about as long as or longer than the deadline for other tasks, setting the switch time to that long may under some circumstances drive BOINC into returning results late.

You probably shouldn't mess with that kind of setting on BOINC. Changing that could mess up the scheduler, and cause tasks to not complete on time.
