Which Projects have a cool looking data visualizations for the work done? How do I activate them?

I just started my BOINC manager, and I'm running the artificial intelligence system.

I'd also like to know. Is there a list somewhere of graphics vs. non-graphics projects?

For me it's cool to see stuff happening when the projects are running.

If you mean graphics that show what is being done; several projects have graphics like wcg, rosseta, docking, and some others..... cpdn.

I recommend Secunia PSI: http://secunia.com/vulnerability_scanning/personal/

This page has a good overview on a lot of these projects, and if available, an example of the graphics produced by each:
