Hello, my first post here. I joined BOINC yesterday, installed the software and selected a research option (biology and medicine). Then I got a message today from the BOINC admin address that said: "Greetings from Science United. We haven't heard from your computer yet. Please make sure that BOINC is installed and running."

I posted back, saying it's running right now, and has been since yesterday afternoon, using Linux Mint 20. I did a screenshot of the BOINC status, to prove it (see image below). But less than a minute after sending my reply, I got it bounced back to me, claiming "unknown host."

That email address is not one associated with your account so there's little you can do about it.
What has happened is you have not joined BOINC directly, but have been "conned" into joining via Science United which is an account manager which does some of the interfacing with BOINC for you, but only allows you to select areas of interest (biology & medicine in your case) and then stops you doing any direct control over the work you get or the communications you receive.
Looking at the screen shot you've provided (which is very helpful) you have a Rosetta task that is plodding on towards completion, but at the time of you looking was suspended due to you doing something with either the mouse or keyboard, hence the message about "suspended due to CPU being busy" - this is a normal state and noting to worry about.
As you are using the "simple" view you can only see one task at a time, their is an alternate view which shows you all the tasks you are working on, all those in your cache and a whole lot of other information. You get to this alternative view by clicking "view" then "advanced view". Clicking on the "projects" tab gives a list of the projects you have been signed up to; the "notices" tab shows a list of notices that have ben sent to you since you last re-started the computer; the "tasks" tab gives you a list of tasks currently on your computer, and their status; the other three tabs are fairly self explanatory.

Without uninstalling Science United and installing BOINC proper (which is buried in the text lower down the download screen) you won't have control over which projects you are signed up to or ready access (via the project web sites) to their help & discussion forums

No! Why do people adamantly believe that Science United is a program one has to uninstall in order to install and use BOINC? Science United is an account manager that runs through BOINC. Its installer will install BOINC and then add Science United as the account manager. You don't uninstall BAM! or GridRepublic either to get rid of those ACs, you just detach them.
