I have just upgraded Ubuntu to 10.10, and find that the foreground text color in the Boinc Manager windows has changed from black to something like #E0D0D3. None of my other apps seems to have been affected in this way. Is this a Boinc Manager bug?

I'm saying that not ALL versions of BOINC 6.10.58 have the problem, because the OP said:

Nothing there about it being restricted to Linux.

Normally BOINC Manager picks up whatever colour set through the operating system's desktop (theme) and colour settings. I don't see why it won't do that through Linux either.
